Thai Salmon Cedar Plank Style

Ingredients

3 lbs. Salmon fillet skin on and boned
1 Cup C.H.E.F. Thai BBQ Sauce
1 Cedar Plank

Preheat barbecue outdoors

Method:

  1. Soak cedar plank in water for 30 minutes.
  2. Remove cedar plank and place salmon, skin down, on the moistened cedar plank.
  3. Brush C.H.E.F. Thai BBQ Sauce and coat salmon evenly to cover surface.
  4. Place the cedar plank with salmon in the center of the hot grill and close lid.
  5. The plank will start to smolder, rendering the smoke flavor. If the cedar plank starts to flame up, douse it with a splash of water.
  6. Cooking time for most fish is 8 to 10 minutes per inch of thickness. This method will take approximately 20 minutes. Enjoy!

BBQ Ribs

Ingredients

2 Cedar Planks
2 Racks Spare Ribs with 1 1⁄2 cups of Thai BBQ Sauce

Method:

  1. Marinate Spare Ribs with C.H.E.F. Thai BBQ Sauce in foil for 8-12 hours in refrigerator.
  2. Place ribs on planks and spread with Thai BBQ Sauce.
  3. Put plank on hot grill, cover and cook on high for 10 to 15 minutes until heavy smoldering occurs.
  4. Reduce heat to low or move planks to an indirect heat area and continue cooking for 45 minutes.
  5. Be sure BBQ remains covered.

Thai Garlic Essence Chicken Plank Style

Ingredients

1 Chicken 2 1/2 - 3lbs. split in half
1 Cup C.H.E.F. Thai Garlic Essence
1 Cedar Plank

Method:

  1. Soak cedar plank in water and soak for 1 hour while preparing grill.
  2. Place split chicken, cut side down, on the moistened cedar plank.
  3. Brush C.H.E.F. Thai Garlic Essence and coat chicken evenly to cover surface. Place on hot grill. Close lid.
  4. The plank will start to smolder, rendering the smoke flavor. If the cedar plank starts to flame up, douse it with a splash of water.
  5. On a gas grill, reduce heat to low, or move cedar plank to indirect heat area if using a charcoal.
  6. Allow to cook 40 to 50 minutes. Check doneness with thermometer (160º ) or poke with fork to see clear juices to determine doneness

Thai Sea Scallops

Ingredients:

1 Lemon
1 Tsp. cracked black pepper
4 Tbs. C.H.E.F. Thai BBQ or C.H.E.F. Thai Garlic Essence

Method:

  1. In medium bowl combine all ingredients with scallops and marinate for 1-2 hours.
  2. Soak the natural plank for 1-2 hours.
  3. Place fish on plank and cover with Thai BBQ or Thai Garlic Essence. Place on grill over hot coals, close lid and cook for 15-20 minutes.
  4. Brush again with sauce and continue to cook for 5 minutes prior to removing from grill.
